Ingredients

  • 1 cup warm milk (about 110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 teaspoon salt
  • 4 cups all-purpose flour, plus more for rolling
  • 1 cup granulated sugar (for filling)
  • 3 tablespoons lemon zest (from about 3 lemons)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1/4 cup fresh lemon juice (for filling)
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Dissolve the yeast in warm milk with a pinch of sugar. Let it sit until frothy, about 5-10 minutes.
  2. In a large bowl, combine the yeast mixture, sugar, melted butter, eggs, and salt. Gradually add flour until a soft dough forms.
  3. Knead the dough on a floured surface until smooth. Place in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
  4. For the filling, mix lemon zest with sugar. Roll out the dough into a rectangle, spread with softened butter, then sprinkle evenly with the lemon sugar mixture. Drizzle lemon juice over the top.
  5. Roll the dough tightly from the long end, then cut into 12 even slices. Place in a greased baking dish, cover, and let rise again until puffy, about 30 minutes.
  6. Bake at 350°F for 25 minutes or until golden. Cool slightly.
  7. For the glaze, mix powdered sugar and lemon juice to achieve the desired consistency. Drizzle over warm rolls.
