Ingredients
- 1 cup warm milk (about 110°F)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs, room temperature
- 1/2 teaspoon salt
- 4 cups all-purpose flour, plus more for rolling
- 1 cup granulated sugar (for filling)
- 3 tablespoons lemon zest (from about 3 lemons)
- 1/4 cup unsalted butter, softened (for filling)
- 1/4 cup fresh lemon juice (for filling)
- 1 cup powdered sugar (for glaze)
- 2-3 tablespoons fresh lemon juice (for glaze)
Instructions
- Dissolve the yeast in warm milk with a pinch of sugar. Let it sit until frothy, about 5-10 minutes.
- In a large bowl, combine the yeast mixture, sugar, melted butter, eggs, and salt. Gradually add flour until a soft dough forms.
- Knead the dough on a floured surface until smooth. Place in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
- For the filling, mix lemon zest with sugar. Roll out the dough into a rectangle, spread with softened butter, then sprinkle evenly with the lemon sugar mixture. Drizzle lemon juice over the top.
- Roll the dough tightly from the long end, then cut into 12 even slices. Place in a greased baking dish, cover, and let rise again until puffy, about 30 minutes.
- Bake at 350°F for 25 minutes or until golden. Cool slightly.
- For the glaze, mix powdered sugar and lemon juice to achieve the desired consistency. Drizzle over warm rolls.
