Total time: 2 hours 20 minutes
Yield: 12 rolls

Ingredients

  • 3 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1/2 teaspoon salt
  • 3/4 cup warm milk (110°F/45°C)
  • 1/4 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1/2 cup creamy peanut butter
  • 2 ripe bananas, mashed
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar
  • 2 tablespoons creamy peanut butter (for glaze)
  • 2-3 tablespoons milk (more if needed for consistency)

Instructions

  1. In a large bowl, combine 2 1/4 cups of flour, sugar, yeast, and salt. Add the warm milk, melted butter, and egg. Mix until combined, then gradually add the remaining flour until a soft dough forms.
  2. Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic.
  3. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. In a small bowl, mix the mashed bananas, peanut butter, brown sugar, and cinnamon until well combined.
  5. Punch down the dough and roll it out on a floured surface into a 12x18-inch rectangle.
  6. Spread the peanut butter and banana mixture evenly over the dough, leaving a small border around the edges.
  7. Starting from the long side, tightly roll the dough into a log. Cut the log into 12 equal pieces and place them in a greased 9x13-inch baking dish.
  8. Cover the dish with a damp cloth and let the rolls rise for another 30 minutes, or until puffy.
  9. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown and cooked through.
  10. In a small bowl, whisk together the powdered sugar, peanut butter, and milk until smooth. Drizzle over the warm rolls.
  11. Serve warm and enjoy!
